A bartender pours drinks. A mixologist designs them. The difference is craft: balancing sweet, sour, bitter and spice so every sip tastes intentional.
What does a mixologist do?
A mixologist studies how ingredients work together. They choose the spirit, balance it with citrus and sweetness, add texture or aroma, and finish the glass so it looks as good as it tastes. Good mixology is part chemistry, part hospitality.
The classic balance
- Strong: the base spirit, such as tequila.
- Sour: fresh lime or other citrus.
- Sweet: fruit, syrup or liqueur.
- Extras: heat, herbs, salt or a spiced rim.
What "handcrafted" means at Playa Grande
Our margaritas are handcrafted and made from scratch, in flavors you may not find at other Mexican restaurants: cucumber, spicy pineapple, guava and mango. See the full list of drinks.
Signature creations
Playa Grande's bar builds signature drinks with the same balance in mind. Días de Cabo layers lemonade, peach, orange, mango and Cointreau, then adds a dried blood orange slice for aroma. Café Loco keeps it simple with Baileys and Kahlúa, topped with rosemary and dried orange. See them all in our signature drinks guide.
How to order like a pro
- Tell the bar what you like: sweet, tart, spicy or refreshing.
- Ask for a spicy rim or a lighter pour of sweetness if you prefer.
- Pair it with guacamole and choriqueso or seafood.
